This is an absolute juicy, tangy, sugary crisp peach cobbler you’ll ever make!

Not to mention that they’re EASY to make, dairy-free, gluten-free, and only requires one bowl to prepare.

The sugary and crunchy cobbler top is a perfect combination for peach and raspberries fillings. Serve them in small ramekin bowls for individual servings or use a big ramekin platter for a family-style dessert.

Either way, be prepared to make extra because you will want a second bowl for this delicious summer dessert.

Ingredients

  • 1 C + 2 Tablespoon Gluten-Free Flour (you can buy any gluten-free flour blend or make your own with the recipe on the blog)
  • ¾ teaspoon baking powder
  • ½ teaspoon salt
  • 4.5 ounces very soft vegan butter
  • ¾ C granulated sugar
  • 1 lime zest
  • 1 egg
  • ¾ C rolled oats

To make filling

  • 1 lb ripe yellow peaches
  • ¼ C raspberries
  • Tablespoon granulated sugar
  • Tablespoon gluten-free flour
  • ½ teaspoon salt
  • 1 lemon juice

Instructions

  • In the bowl, mix gluten-free flour, sugar, baking powder, soft butter, salt, zest, and eggs
  • Using your hands or a pastry blender, cut down the fat from the butter and mix well.
  • Add rolled oats. The dough will be very soft.
  • Shape the dough into a flat disk, and wrap it with plastic wrap. Chill the dough in the freezer for at least 30 minutes to 1 hour.
  • In the meantime, make the filling by mixing all ingredients in a bowl
  • After 1 hour, take the cobbler top dough put of the freezer.
  • Place peach filling in small ramekins.
  • Cut the dough into cubes, cut it evenly and place the dough on top of the fillings.
