Ultimate Vanilla Cake

This cake is not pretentious. It is simple and honest. 
A perfect, moist vanilla cake that I’m so happy to have discovered. I have made it for many occasions, in many different shapes. Also good for cupcakes and sheet cakes, this recipe from glorious treats I will keep handy for a long time. 

Ultimate Vanilla Cake

Very moist vanilla cake for any occasions

  • 1 and 1/4 cup cake flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1.5 teaspoon vanilla extract
  • 1/2 cup light oil such as sunflowerseed oil, or vegetable oil
  • 1/2 cup buttermilk (if you don't have buttermilk, use 1/2 cup of whole milk plus 1/2 teaspoon white vinegar or lemon juice. Add acid to the milk then set aside for 5 minutes before using


  • Pre-heat oven to 350 degree F
  • In a medium bowl, add cake flour, baking powder, baking soda, and salt. Stir together with whisk and set aside.
  • In the bowl of electric mixer, add eggs and beat for 10 seconds. Add sugar and continue to beat on medium speed fopr about 30 seconds.
  • Add vanilla extract and oil, keep beating.
  • Reduce mixer speed to low and slowly add about half of the flour mixture. Add milk, then the rest of dry ingredients.
  • Beat until just combined. Scrape down the bowl. The batter will be thin.
  • Pour the batter into a 6 inches round cake pan. If you want to make cupcakes, fill muffin pans bout 2/3 full.
  • Bake for 12-14 minutes. Test them with cake tester to check if they are done. (the tester should come out clean)
  • Frost as desire.
